Week 41: Frosted Strawberry Sugar Cookies

With the Super bowl and Valentine's Day being just around the corner, I couldn't resist making these delicious strawberry sugar cookies.

And yes, the beautiful pink hue is 100% natural. It comes from freeze-dried strawberries and strawberry preserves.

These are my take on the classic Lofthouse sugar cookies that you can find at most grocery stores. I love those cookies, but I wanted to make a completely natural version.

Plus, these are just perfect for a game-day snack or a Valentine's Day party. My whole family finished eating these cookies so fast!

 

RECIPE:


INGREDIENTS:

Cookies:

  • 1/2 cup butter, softened

  • 1/2 cup granulated sugar

  • 1 egg

  • 1 1/4 cup all-purpose flour

  • 1/2 cup freeze-dried strawberries, crushed

  • 1 tablespoon strawberry preserves

Frosting:

  • 1/4 cup butter, softened

  • 1 1/4 cups powdered sugar

  • 2 tablespoons milk

  • 1/2 cup freeze-dried strawberries, crushed

STEPS:

  1. Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and sugar together. Add in the eggs and beat for two minutes until light and fluffy. Then mix in the flour, freeze-dried strawberries, and strawberry preserves.

  3. Roll two tablespoons worth of cookie dough into a ball and flatten slightly. Place onto the baking sheet and repeat for the remaining cookie dough.

  4. Bake for 10 minutes and set aside to cool. In the meantime, make the frosting.

  5. With a mixer, beat the butter, powdered sugar, milk, and freeze-dried strawberries together until creamy. Once the cookies are cooled, decorate them with your frosting.
