Since peaches are coming in season, I thought it was the perfect time to bake a peach cake.

The hints of almond and lemon help bring out the rich flavor of peaches. Plus, the cake is so tender and fluffy that you will keep coming back for more slices.

I also love how the recipe requires no mixer! You only need a bowl and a spatula or whisk to mix the ingredients.

Serve this peach cake as it is or with a dusting of powdered sugar, a dollop of whipped cream, or even a scoop of ice cream.
RECIPE:
INGREDIENTS:
1 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup olive oil
2 eggs
1/2 cup yogurt
1/2 teaspoon almond extract
1/2 tablespoon lemon zest
1 3/4 cups of fresh peaches, sliced (reserve 1/4 cup for later)
STEPS:
Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.
In a large bowl, combine all your ingredients except for the peaches.
Add all of the peaches to the batter except the 1/4 cup that you will reserve for the top.
Pour the batter into your prepared pan and top with the remaining peaches. Bake for 45 minutes until golden brown.
