Week 47: Deep Dish Lava Cake

What's better than individual chocolate lava cake but a big batch of lava cake?

I am obsessed with this idea of making the lava cake in a casserole pan because it’s perfect for potlucks.

I also love that the cake is so simple to make. It’s done in less than an hour and feeds plenty. 

I have to make this dish again, served alongside some vanilla ice cream. I can’t believe I forgot to buy some.

 

RECIPE:


INGREDIENTS:

  • 2 sticks butter

  • 4 oz. chocolate chips

  • 4 eggs

  • 1/3 granulated sugar

  • 1/3 cup all-purpose flour

  • 1/4 cup cocoa powder

STEPS:

  1. Preheat your oven to 350 degrees F and grease an 8x8-inch baking sheet with butter.

  2. Melt the butter and chocolate together in 30-second intervals in the microwave. Set aside to cool.

  3. In a stand mixer, beat the eggs and sugar until light and fluffy, so about 3 minutes. Then, add the chocolate-butter mixture, flour, and cocoa powder. 

  4. Pour the batter into your prepared pan and bake for 30 minutes. Serve immediately.
