Week 49: Banana Coffee Cake

I have been craving banana bread all week, so I decided to make it today but with a unique spin: banana coffee cake.

There's nothing better than waking up in the morning to a snack cake. It's perfect for snacking on the go or a sweet breakfast treat.

Also, on a side note, I think it's so interesting that coffee cake does not include coffee! It's a little counterintuitive.

If you want to elevate the recipe to the next level, try adding chocolate chips or pecans to the batter. They taste delicious in banana bread!
RECIPE:
INGREDIENTS:
Cake Batter:
3/4 cup mashed bananas
1/2 cup Greek yogurt
1 egg
7 tablespoons butter, melted
1/3 cup granulated sugar
1/3 cup brown sugar
3/4 teaspoon teaspoon baking soda
1 1/4 cups all-purpose flour
Cinnamon-Sugar Mixture:
1/4 cup brown sugar
1 1/4 teaspoons ground cinnamon
Crumble:
1 cup all-purpose flour
1/4 cup brown sugar
1/4 cup granulated sugar
6 tablespoons butter
Icing:
1/2 cup powdered sugar
1/2 tablespoon milk
STEPS:
Preheat your oven to 350 degrees F, and line an 8x8-inch cake pan with parchment paper.
In a large bowl, mix the mashed bananas, yogurt, egg, and butter. Slowly fold in the flour, baking soda, brown sugar, and granulated sugar.
In a smaller bowl, whisk the cinnamon and brown sugar together and set aside.
In a third bowl, combine the flour, brown sugar, granulated sugar, and butter together to form the crumble.
Pour the half of the cake batter into your prepared pan and top with a layer of cinnamon sugar. Add the remaining batter on top, and top that off with the crumble you made.
Bake the cake for 45 minutes. While the cake is baking, mix the powdered sugar and milk in a bowl to make the icing.
Once the cake is ready, drizzle the icing with a fork and serve.
