Week 50: Cowboy Cookies (Wyoming)

Cowboy cookies are easy to make, and a delicious treat! These cookies are chewy and soft inside, and crispy on the outside.


They contain an oatmeal cookie base and are filled with chocolate chips, pecans/walnuts, and shredded coconut.


Cowboy Cookies are said to be a cookie that cowboys on the trail enjoyed. They were also a quick and easy way to get nutrients for the long travels that cowboys made.

Today I made my last official state dessert, however next Sunday I will celebrate with a final dish to wrap up my 50 state adventure! Stay tuned for more. :)

RECIPE:


INGREDIENTS:

  • 1 cup butter

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 cup semi-sweet chocolate chips

  • 1 cup quick oats

  • 3/4 cup chopped pecans

  • 3/4 cup unsweetened coconut flakes

STEPS:

  1. Preheat your oven to 375 degrees F, and line two baking sheets with parchment paper.

  2. In a large bowl, cream the butter and two sugars. Add the eggs one at a time and beat with an electric mixer for 2 minutes. Add the remaining ingredients and fold to combine. With a cookie scoop, drop the dough onto the prepared baking sheets and bake the cookies for 15 minutes.
